Coleslaw

A vegan version of a classic side dish.

Coleslaw

Ingredients

  • 1 Small white cabbage, thinly sliced
  • 5 Carrots, grated
  • 1 Brown onion, thinly sliced
  • 200g / 7 oz Vegan mayo
  • 1 tsp Dijon mustard

Method

  1. Soak the sliced onions in water for a couple of minutes to take away some of the acid.
  2. Mix all of the idegredients together, then serve. It really is that simple. 

Variations

  • You can use red instead of white cabbage - of combine them both.
  • Same with red onions.
  • A small handfull of poppy seeds go well with the dish.
